On Tuesday 20th March, children from Third Class made Strawberry Shortcake biscuits with their parents and Ana. They were delicious! Here’s the recipe!
For the biscuits
170g white flour
55g Castor sugar
1 medium egg
For the filling
100g mascarpone or ricotta cheese
100g double cream
Lemon zest and vanilla essence
4 tablespoons of Caster sugar
Icing sugar for dusting
Preheat the oven to 180degrees/gas mark 4.
Place the flour and sugar into a bowl and rub in the butter.
Add the egg and knead lightly.
Roll out to about 7mm thick and cut out shapes with a cutter.
Bake biscuits until pale brown. This will take about 10minutes.
Leave the biscuits to cool and make the filling-
Whip up the cream and fold in the mascarpone cheese.
Add lemon zest, sugar and vanilla essence to the cream and whip up a bit more until semi stiff.
Place one biscuit on a plate and spoon some cream mix onto the biscuit.
Arrange some sliced strawberries on top of the cream and add another biscuit on top.
Repeat this with the rest of the biscuits.
Dust the biscuits with icing sugar.
